3 tablespoon Unsalted Butter Stick

2 medium (2-1/2" dia) Onions

4 fl oz Sauvignon Blanc Wine

5 7/16 cup Chicken Broth, Bouillon or Consomme

8 oz Gruyere Cheese
DIRECTIONS
Use the Atkins recipe to make Atkins Low Carb Wheat Bread for this recipe. You will need 4 servings/slices of bread; toasted.
- Cut onions in half and then thinly slice. Melt butter in a large heavy-bottomed pot over medium-low heat. Add white onions and cook 30-45 minutes, stirring occasionally, until onions are very soft and deep golden brown.
- Add wine and cook on high for 3-5 minutes, until reduced by half. Add chicken broth and bring to a boil over high heat. Reduce heat to low and simmer, covered, for 20 minutes. Season with salt and pepper to taste. Toast the bread.
- Pour soup into heat proof bowls, top with toast and Gruyere. Place bowl into a microwave for 1 minute until cheese is melted. Or if you prefer, place under broiler for 2-3 minutes, until cheese is brown and bubbles. Each serving is 1 ½ cup soup, 1 slice of bread and 2 ounces cheese.
Cooking Tip
Try and shave off long, thin slices of Gruyere for the top of the soup to create the perfect bubbly cheese layer.
