  • 3 Tbsp Organic High Fiber Coconut Flour
  • 3/4 tsp Chili Powder
  • 1 tbsp Organic 100% Whole Ground Golden Flaxseed Meal
  • 1/8 tsp Salt
  • 3 large Egg White
  • 1/2 cup Coconut Milk Unsweetened
  • 1/2 tsp Xylitol
  • 1 1/3 tbsp Light Olive Oil

  1. Combine the 3 tbsp coconut flour, chili powder, 1 tbsp flax meal, and salt in a small bowl.  Set aside.
  2. Whisk the egg whites, coconut milk, and sugar substitute.  Add the flour mixture, mix to combine, then allow to sit for 5 minutes.
  3. Heat a large non-stick skillet with 1 teaspoon of oil over medium-high heat.  Using a 1/4 cup measure, pour batter into pan and spread out into a 5-inch tortilla shape.  Allow to cook for 2-3 minutes, until golden brown underneath and fully set on the top.  Flip over and cook 1 additional minute.  Repeat for remaining 3 tortillas.
  4. Place cooked tortillas on a paper towel and a paper towel between each.  Tortillas may be refrigerated for up to 1 week, store in an airtight container with the paper towels in between or freeze for up to 3 months.
