INGREDIENTS

  • 3 tablespoon Extra Virgin Olive Oil
  • 20 oz Chicken Breast Filet, with skin
  • 0 1/2 cup, chopped Onions
  • 1 1/2 tsp Garlic
  • 2 tsp Rosemary
  • 2 fl oz Sauvignon Blanc Wine
  • 0 1/2 tsp Salt
  • 0 1/4 tsp Crushed Red Pepper Flakes
  • 1 1/2 cup Red Pack Whole Peeled Plum Tomatoes

DIRECTIONS

Even though there is wine in this recipe, it is considered a Phase 1 recipe because most of the wine is burned off during cooking.  
 
  1. In a large skillet, heat oil over medium-high heat. Brown 1/2 of the chicken seasoned with salt and black pepper, skin side down to begin then flip, for about 4 minutes per side.  Repeat; about 8 minutes per batch. Transfer to a plate.
  2. Add onion, minced garlic and rosemary to the skillet; cook 4 minutes, until onion is softened. Add wine and bring to a boil, stirring to loosen any browned bits. Add salt and pepper flakes.
  3. Return chicken, skin side up, and accumulated juices to the skillet. Cook until almost all the wine has evaporated, about 2 minutes. Add tomatoes.
  4. Cover, reduce heat to low and simmer 30 minutes until chicken is cooked through. Transfer chicken to a serving platter. Boil sauce 2 minutes to thicken.
  5. To serve, spoon sauce over chicken.
