Cafe Caramel Panna Cotta

Ingredients:

  • 1 envelope Gelatin, unsweetened
  • 3 tablespoons Confectioners (powdered) erythritol
  • 1 teaspoon Vanilla Extract
  • 1 each Atkins Café Caramel Shake
  • 5 drops Liquid Stevia Drops
  • 2 tablespoons Tap Water
  • 1 1/2 cups Heavy Cream, liquid

Directions:

Ingredient note: We recommend using English Toffee flavored liquid stevia drops for this recipe.
  1. In a cup, sprinkle the gelatin onto the water and set aside.
  2. In a small saucepan, whisk together the cream, Atkins Cafe Caramel Protein Shake, sweeteners and vanilla. Warm over medium heat, stirring occasionally, until just starting to simmer, about 10 minutes.
  3. Remove from heat, and whisk in the gelatin until dissolved. Fill 6 ramekins with ½ cup of the liquid, cover with plastic wrap, and refrigerate for at least 3 hours or until the gelatin is set. OPTONAL: serve with a dollop of whipped cream (1 tablespoon adds .021 net carbs), or a teaspoon of sugar free caramel syrup (does not add net carbs).
Variations: We developed this recipe using the Café Caramel shake, but you could substitute any other shake for a wealth of flavor options.
