INGREDIENTS

  • 3 cup Cauliflower, florets, raw
  • 1 oz Cream Cheese
  • 1 Tbsp Chives, fresh, chopped
  • 0 1/4 tsp Garlic Powder
  • 0 1/8 tsp Salt
  • 0 1/8 tsp Black Pepper, ground
  • 2 oz Cheddar cheese, shredded
  • 1 each Egg (1 large fresh, whole, raw egg = 50g)
  • 1 oz PORK RINDS, PORK UTZ Quality Foods, LLC
  • 5 g PAM Olive Oil Cooking Spray, 5 OZ Conagra Brands Inc

DIRECTIONS


  1. In a large pot over high heat, bring about 6 cups water to a boil. Add cauliflower and cook until very tender, about 10 minutes. Drain until cool enough to handle, then use a clean kitchen towel and squeeze as much water out for the cauliflower as possible.
  2. In a food processor, chop the cauliflower until almost pureed. Add the cream cheese in chunks, ½ of the chives, garlic powder and salt and pepper and process until smooth and well combined. Stir in shredded cheddar cheese. Place in a covered bowl in the refrigerator to chill for at least 30 minutes.
  3. Preheat air fryer to 390°.
  4. In a small bowl, whisk the egg. Place crushed pork rinds in another bowl. Scoop 2 tablespoons of the cooled mashed cauliflower and roll with hands into a ball. Evenly coat in egg, then roll in the pork rinds to coat and place on a baking sheet. Repeat until all the mashed cauliflower has been used to create coated 9 balls. Spray the balls with olive oil cooking spray, and arrange in a single layer in the air fryer. Cook for 5-7 minutes, until the outsides are browned and crispy and the cheese is melted. Serve warm. One ball is one serving.
