Lamb, Eggplant, Onion and Red Bell Pepper Kebabs

How are Net Carbs Calculated?


  • 5 Ounce lamb, cut into 1 1/2-inch cubes
  • 1 Cup eggplant, cut into 1 1/2-inch cubes
  • 1/2 Each small red onion, cut into 1 1/2-inch cubes
  • 1 Each small red bell pepper, cut into 1 1/2-inch cubes


  1. Preheat grill and soak two bamboo skewers in warm water for at least 20 minutes.
  2. Alternate the lamb, eggplant, onion and bell pepper on the skewers. Coat lightly with olive oil spray or brush lightly with olive oil.  Season with salt and freshly ground pepper.
  3. Grill, turning 3-4 times until the lamb is cooked to desired doneness and vegetables are tender, about 10 minutes.

How to Calculate Net Carbs

In order to calculate Net Carbs of any whole food item, it's a simple calculation based on the Nutrition Facts panel:

Total Carbohydrates - (Minus) Dietary Fiber = (Equals) Net Carbs

For low carb products sweetened with sugar alcohols (ie: glycerin, maltitol, etc), refer to the Nutrition Facts panel of the product:

Total Carbohydrates - (Minus) Dietary Fiber - (Minus) Sugar alcohol = Net carbs

This reflects the fact that Dietary Fiber doesn't impact blood sugar levels. Sugar alcohols also have a negligible impact on blood sugar, they too are subtracted from total carbs to yield the Net Carb count.
