INGREDIENTS

  • 1 1/2 lb Chicken Breast Meat (Broilers or Fryers)
  • 2 tbsp Fish Sauce
  • 3 medium (4-1/8" long) Scallions or Spring Onions
  • 1 tbsp Soy Sauce (Tamari)
  • 0 1/2 fl oz Tap Water
  • 2 teaspoon Sucralose Based Sweetener (Sugar Substitute)
  • 2 tablespoon Peanut Oil
  • 1 1/2 tsp Garlic
  • 0 1/4 tsp Crushed Red Pepper Flakes
  • 1 1/8 cup fresh basil

DIRECTIONS

  1. Combine chicken, fish sauce, tamari, 1 tablespoon water and sugar substitute in a bowl and let stand 30 minutes.
  2. Heat a large skillet over medium-high heat and add oil. Heat until hot but not smoking. Add green onion and stir-fry 2 minutes, until softened. Add garlic and pepper flakes and stir-fry 30 seconds.
  3. Remove chicken from marinade with a slotted spoon and add to onion mixture. Stir-fry until chicken is almost cooked through, about 3 minutes.
  4. Meanwhile, bring marinade to a boil in a small sauce pan and simmer for 3 minutes. Add to stir-fry mixture.
  5. Remove from heat and stir in 1 cup basil.
  6. Transfer to serving bowl and sprinkle with remaining basil.
