INGREDIENTS

  • 1 each Egg
  • 0 1/8 cup Buttermilk, whole milk
  • 1 tbsp Grapeseed Oil
  • 0 1/2 tsp Vanilla Extract
  • 9 teaspoon(s) truvia sweet complete (2 tsp= 7 g)
  • 3 Tbsp Coconut Flour
  • 0 1/8 cup Cocoa powder, unsweetened, processed with alkali
  • 0 1/4 tsp Baking soda
  • 0 1/8 tsp Salt
  • 1 bar Atkins S'mores Bar

DIRECTIONS

  1. Preheat oven to 350°, and prepare a mini muffin pan with 7 liners, or lightly grease 7 wells.
  2. In a small bowl, whisk together the egg, buttermilk, oil, and vanilla. Add the sweetener and mix well.
  3. Into a medium bowl, sift together the coconut flour, cocoa powder, baking soda, and salt, breaking up the flour and cocoa powder as needed. Add the dry ingredients to the wet and whisk until well combined. Set aside to thicken.
  4. Chop the Atkins S’mores bar into 32 roughly even pieces (each the size of a large chocolate chip). Fold the bar into the batter.
  5. Fill each of 7 mini muffin wells with 2 tablespoons batter. Bake for 11-13 minutes, or until a toothpick comes out with just a few crumbs. Allow to cool for 10 minutes before removing from the pan. Store in an airtight container at room temperature for 3 days, or freeze for up to 3 months. One mini muffin is one serving.
