INGREDIENTS

  • 1 cup Strawberries, fresh, sliced
  • 1 1/2 teaspoon Confectioners (powdered) erythritol
  • 1 bar Atkins Birthday Cake Bar
  • 0 1/2 cup Heavy Cream, liquid
  • 1 tsp Vanilla Extract

DIRECTIONS

  1. In a small bowl sprinkle ½ teaspoon powdered erythritol (or to taste) over the sliced strawberries and set aside.
  2. Finely chop the Atkins Birthday Cake Bar and set aside.
  3. In a medium bowl, use a hand mixer to whip the cream with the vanilla and 1 teaspoon powdered erythritol until light and fluffy.
  4. In each of two small glasses or 8-ounce jelly jars, layer 1/6 of the strawberries (about 28 g), 1/6 of the bar (about 8 g), and ¼ of the whipped cream (about 1 ounce). Repeat the layers, then top with remaining strawberries and bar. Eat immediately, or refrigerate for up to 1 day.
