INGREDIENTS

  • 0 1/4 cup Total 2% Greek Yogurt
  • 0 1/2 cup Real Mayonnaise
  • 0 1/3 tbsp Unseasoned Rice Wine Vinegar
  • 0 1/2 tsp Dry Mustard
  • 1 tsp, ground Thyme (Dried)
  • 1 dash Salt
  • 1 dash Black Pepper
  • 2 cup, cooked, diced Chicken Breast
  • 1 stalk, medium (7-1/2" - 8" long) Celery
  • 0 1/4 cucumber (8-1/4") Cucumber (with Peel)
  • 0 1/4 medium (2-3/4" dia) (approx 3 per lb) Apples
  • 0 1/2 cup, chopped Walnuts
  • 8 large leaf Boston Lettuce
  • 1 tbsp Parmesan Cheese (Shredded)

DIRECTIONS

 

  1. Whisk the first 7 ingredients (yogurt through pepper) together in a medium mixing bowl.  Dice the celery, cucumber and apple.   
  2. Fold in the next 5 ingredients (chicken through walnuts).  Optional:  toast walnuts at 350°F for 5-8 minutes first.  
  3. Place 2 lettuce leaves on each plate and spoon 1/4 of chicken salad into each cup.  
  4. Sprinkle with Parmesan cheese and serve.

 

Cooking Tip

Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
