Keto Celery Siciliano Recipe

2 tablespoon Extra Virgin Olive Oil
1 1/2 lb Celery
0 1/4 medium (2-1/2" dia) Onions
1 Tbsp Thick-It-Up
1 cup Bouillon Vegetable Broth
2 plum tomato Red Tomatoes
6 each Green Olives
2 tbsp Parsley
- Heat oil in a large skillet over medium heat. Dice the celery and onion then add them to the pan; cook 5 minutes, until onion is softened. Sprinkle with thickener, and season with salt and pepper; mixing well. Sauté 2 minutes. Stir in broth; heat to boiling.
- Cover and simmer 10-15 minutes, until celery is tender. Dice the tomatoes and slice the olives. Uncover the pan and stir in tomatoes and olives. Simmer 3 minutes, until liquid thickens. Season to taste with salt and pepper. Sprinkle with chopped parsley.
