Atkins "Cornbread"

This "cornbread" contains no cornmeal and is a perfect accompaniment for fried chicken or a bowl of chili.
  • Vegetable oil spray for greasing baking pan
  • 1/2 cup soya flour
  • 1/4 cup wheat gluten
  • 3 large eggs
  • 1 cup milk
  • 2 tbsp melted butter
  • 1/3 cup vegetable oil
  • 1 tbsp baking powder
  • 4 ounces jalapeno jack cheese, grated
  • 1 chipotle en adobo, finely chopped (optional)
  1. Preheat oven to 350F. Spray an 8-inch square baking pan with oil spray.
  2. In a medium bowl, combine soya flour and wheat gluten. In another medium bowl, beat egg, milk , oil and butter. Stir in cheese and chipotle (optional). Combine bake mix and egg mixtures, stirring until ingredients are just combined (batter will be stiff).
  3. Spread mixture into prepared pan. Bake until golden. Cool on a wire rack 5 to 10 minutes before cutting.
