How are Net Carbs Calculated?

INGREDIENTS

  • 6 Ounce cod fillet, skinned
  • 2 Cup fresh broccoli florets
  • 1 Ounce Herb-Butter Blend (2 Tablespoons)

DIRECTIONS

To serve more than one person, simply double or triple (or whatever) the ingredients and cook in individuals packets. Use the Atkins recipe for Herb-Butter Blend or any compound butter.

  1. Preheat oven to 350°F.
  2. Center the broccoli on a piece of aluminum foil large enough to completely enclose all the ingredients, including a generous fold. 
  3. Top with fish and the Herb-Butter Blend. Season to taste with salt and freshly ground black pepper. Fold packet and crimp edges to seal tightly.
  4. Bake 10 minutes or until fish flakes easily and broccoli is tender.

How to Calculate Net Carbs

In order to calculate Net Carbs of any whole food item, it's a simple calculation based off the Nutrition Facts panel:

Total Carbohydrates - (Minus) Dietary Fiber = (Equals) Net Carbs

For low carb products sweetened with sugar alcohols (ie: glycerin, maltitol, etc), refer to the Nutrition Facts panel of the product:

Total Carbohydrates - (Minus) Dietary Fiber - (Minus) Sugar alcohol = Net carbs

This reflects the fact that Dietary Fiber doesn't impact blood sugar levels. Sugar alcohols also have a negligible impact on blood sugar, they too are subtracted from total carbs to yield the Net Carb count.
