Nutritional Information Per Serving:
5 Ounces lamb chop
1 Cup eggplant, cut into 1-inch cubes
1/2 onion, cut into 1-inch cubes
1 small red bell pepper, cut into 1-inch cubes
2 Cups mixed greens
1 Serving Greek Vinaigrette
Use the Atkins recipe for Greek Vinaigrette
to dress the salad.
- Soak skewers in warm water for at least 20 minutes.
- Assemble skewers alternating cubes of the lamb, eggplant, onion and bell pepper.
- Spray or spread a light coating of oil onto the assembled skewers, season with salt and freshly ground pepper and grill until lamb is cooked to desired doneness and vegetables are tender.
- Toss salad greens with dressing and serve with kebabs.
