Nutritional Information Per Serving:
1 Serving serving Basil Pesto (1/4 cup)
4 Cups chopped arugula
1 Pound mozzarella, cut into 8 equal slices
2 small tomatoes, cut into 8 slices
Use 1/4 cup of the Atkins recipe for Basil Pesto.
- Toss arugula with 2 tablespoons of the pesto. Mound onto serving plates.
- Top with alternating slices of mozzarella and tomato. Drizzle with remaining pesto and serve.
