Nutritional Information Per Serving:
2 large eggs
2 Tablespoons sour cream
1/2 Cup chopped zucchini
1 Teaspoon extra virgin olive oil
1/4 Cup shredded Cheddar cheese
- Lightly beat together eggs and sour cream. Set aside.
- Heat a skillet over medium-high heat. Lightly sauté zucchini in oil for 2 minutes.
- Add egg-sour cream mixture and cheese to the skillet and scramble together until thoroughly cooked.
